Ok - so you want to buy that bread machine or you've just bought one, but what do you do with all your old recipes?
Throw them away and start again from scratch?
Well you don't have to, with a little know-how and time you can convert your old recipes so you can use them with your bread machine.
Here's what to do: If a recipe doesn't include instructions for your bread machine size then use the basic rule:
- 1 lb machine = Approx. 2 cups flour
- 1 1/2 lb machine = Approx. 3 cups flour
- 2 lb machine = Approx. 4 cups flour
To find your bread machine pan size: Fill the bread pan with water and measure it out in cups. If you have less than 10 cups of water this is approx. 1 pound, 11-13 cups of water approx. 1 1/2 pounds, more than 13 cups of water approx. 2 pounds
When preparing bread: Add ingredients to bread machine in the order suggested by the manufacturer. If there are no specific instruction for the bread you're baking, chose basic bread cycle, medium/normal color setting, for a 1 1/2 lb. loaf.
NOTE: It's a good idea to check the dough after 5 minutes of mixing in your machine. It should be a smooth satiny ball. If the dough looks too dry then add 1-2 tbsps of water. Alternately if the dough is wet-looking, add 1-2 Tbsps of flour.
